Directions
You Will Need: 1 large egg; 1/3 cup unsalted butter (about 5 & 1/3 tablespoons); 1 cup milk. Baking Tools: bowl & whisk; baking pan (see below for option). Preheat oven to 400 degrees F. Grease (or use cooking spray) the bottom of your baking pan. If using cast iron skillet, place in oven to warm. In a large bowl, melt 1/3 cup of unsalted butter. The butter should be melted but not boiling. Tip: Place butter in a microwave safe dish, cover with a paper towel to prevent spattering, and microwave for about 40 seconds. Using a whisk, blend together melted butter, (1) baking powder, (2) baking soda, (3) salt and (4) honey granules. Honey Granules: The honey granules included in this kit also make amazing honey butter! Feel free to add only half the packet into the batter, and use the rest to make honey butter. See tips and suggestions below. Add 1 large egg, (5) brown sugar and (6) cane sugar. Mix until smooth, fluffy, and lightens in color. Stir in 1 cup milk, (7) cornmeal and (8) flour. Mix well, until no lumps are visible. Pour the batter into the prepared pan. Bake according to the pan size shown below. Check if done by inserting a toothpick into the center of the pan. If it come out clean, it is done. If batter clings to the toothpick, it needs more time. Let cool for 5 minutes, and enjoy! Baking Pan Options: 8-inch metal or glass pan size: 20-25 bake time (minutes); 9-inch metal or glass pan size: 20-25 bake time (minutes); cast iron pan size: 18-22 bake time (minutes); regular muffin pan size: 12-15 bake time (minutes); mini muffin pan size: 10-13 bake time (minutes). 375 degrees F for dark or coated pans (except cast iron). Tips and Suggestions: Honey butter: make honey butter from the honey granules included! If using half the packet, melt 4 tbsp butter in a small saucepan, and whisk in the remaining honey granules. On low heat, mix for 2-3 minutes. If using the whole packet, use 8 tbsp butter. Try adding: 1 cup corn (fresh or frozen) or 1/2 cup creamed corn (reduce milk by 1/4 cup), 1 jalapeno (remove seeds and dice), 3/4 cup cheese, ham or bacon, 1-2 tablespoons fresh herbs such as basil. High altitude cooking: you may want to increase the oven temperature. Using canola or vegetable oil: replace the butter with 1/3 cup of oil. Vegetarian and Vegan: replace the butter with 1/3 cup of canola or vegetable oil, replace the egg with egg replacer, and use dairy-free milk.
