You Will Need: 1 large egg; 4 tablespoons butter (1/4 cup); bowl & spoon (or fork); cookie sheet. Preheat oven to 375 degrees. Grease (or use cooking spray) the bottom of a cookie sheet, or line the sheet with a non-stick baking mat. Melt 4 tablespoons of unsalted butter. The butter should be melted but not boiling. Tip: Place butter in a microwave safe dish, cover with a paper towel to prevent spattering, and microwave for about 40 seconds. In a medium bowl, blend together melted butter, (1) baking soda, (2) vanilla powder, (3) salt, and (4) baking powder until smooth. Add 1 large egg, (5) cane sugar, (6) flax. Beat until fluffy and lightens in color. Stir in the (7) flour and mix well, until no flour is visible and the dough is smooth. Scoop about 1 tablespoon of dough at a time onto the cookie sheet, making 10 to 13 cookies. Without Frosting: If you prefer cookies without frosting, generously sprinkle the (10) sanding sugars over the dough prior to baking. Bake for 9-11 minutes until golden brown. Let sit on cookie sheet for 2-3 minutes, then transfer to a wire rack to finish cooling. Royal Icing (Smooth, hard, matte finish): You will Need: Mixer; 1 egg white. In the bowl of standing mixer, beat the egg white of 1 large egg on high for 1 to 2 minutes, until frothy. On low speed, gradually add (8) vanilla powder and (9) powdered sugar until sugar is completely blended. Turn speed to high and beat for 4 to 6 minutes, or until the frosting forms stiff, glossy peaks. Add food coloring if desired, and blend well. Decorate cookies with frosting and (10) sanding sugars. - Or - Cream Cheese Frosting (Light and creamy): You Will Need: mixer; 1 package cream cheese (8 oz or 1/2 cup); 4 tablespoons butter (1/4 cup). In the bowl of standing mixer, blend the softened cream cheese and soften butter until smooth. On low speed, add (8) vanilla powder then gradually stir in (9) powdered sugar until blended. Add food coloring if desired, and blend well. Decorate cookies with frosting and (10) sanding sugars.
