Directions
You Will Need: 1 large egg; 2 tablespoons unsalted butter; bowl & spoon (or fork); cookie sheet. Preheat oven to 350 degrees. Grease (or use cooking spray) the bottom of a cookie sheet, or line the sheet with a non-stick baking mat. Melt 2 tablespoons of unsalted butter. The butter should be melted but not boiling. Tip: Place butter in a microwave safe dish, cover with a paper towel to prevent spattering, and microwave for about 35 seconds. In a medium bowl, blend together melted butter, (1) baking powder, (2) vanilla powder, and (3) salt until smooth. Add 1 large egg, (4) cane sugar, (5) and flax. Beat until fluffy and lightens in color. Add (6) cocoa, (7) flour, (8) chocolate chips and (9) walnuts. Mix until smooth and no flour is visible. Spoon 1 to 2 tablespoons of dough onto the cookie sheet, about 2 inches apart, making 9 to 12 cookies. Sprinkle the (1) finishing salt on top of the cookies. Bake for 11-13 minutes until cookies begin to brown. Let sit on cookie sheet for 5-10 minutes then transfer to a wire rack to finish cooling. Do not overcook! Overcooking will cause them to flatten. Tips and Suggestions: Try Adding: Caramel chunks or toffee pieces. Microwave Cooking: Cook on high for 30 to 50 seconds in a microwave safe dish. High Altitude Cooking: You may want to increase the oven temperature. Using Canola or Vegetable Oil (Vegetarian): Replace the butter with 2 tablespoons of oil. For a Low-Fat Version: Replace the butter with 1.5 tablespoons of applesauce.
