Keep frozen. Elk Cooking Tip: Low and slow. Durham Ranch Elk has a naturally deep red color that is much darker than beef, so when cooked to medium, it will look rare, and if it looks a pink medium it is actually well done. Try using a blackberry, pepper & vermouth sauce for an earthy sweet addition that will take dark fleshed game like elk and venison to new heights.
